Roasted Sweet Potatoes with a Red Rascal Twist

Roast potatoes are fantastic however sometimes they do get a bit boring. Sweet potatoes are "ranked the sweet potato number one in nutrition of all vegetables. With a score of 184, the sweet potato outscored the next highest vegetable by more than 100 points" so they are good for you too! Big kids and little kids love it! Sorry there will be no left over's but they are also great cold for a BBQ
1 kg sweet potatoes
1/2 cup oil
1/4 cup of Red Rascal Rustic
2 table spoons of brown sugar
pinch of salt (rock salt if possible ground)
Cut the sweet potatoes into good chunks (size you would do a roast potatoes) put them in a baking tray. Pour on the oil and Red Rascal and coat the sweet potatoes (using hands is best!) Sprinkle on the brown sugar and the salt. Pop in the oven on about gas mark 7 on the middle shelf. Do not turn or they will fall apart. Perfect!
